Steak with Gorgonzola and Caramelized Onions

Paula Deen says you need only three things to make a good steak: Salt, pepper, and butter. And this recipe proves it! These gourmet steaks come together in three steps: make Gorgonzola butter, caramelize onions, and grill steaks.

Beware, this is a rich one! A little steak goes a long way. This recipe was adapted from Southern Style Steaks Recipe.

Steak with Gorgonzola and Caramelized Onions

Cooking: Moderate
Serving Size: 2 to 3 servings
Prep Time: 15 minutes
Cook Time: 15 minutes

 

Ingredients

  • 1 ½ to 2 pounds grass fed steak (Sirloin, Ribeye, New York Strip)
  • Coarse salt and fresh ground black pepper

Caramelized Onions:

  • 2 tablespoons butter
  • 2 Vidalia onions, thinly sliced

Gorgonzola Butter:

  • 1 stick butter, softened
  • 3 tablespoons crumbled Gorgonzola

 

Directions

1.) Season the steak with salt and pepper. Set out and bring to room temperature while preparing the recipe.

2.) Preheat a grill to high heat. In a large saucepan, melt 2 tablespoons butter over medium to low heat. Add the Vidalia onions and cook, stirring as needed, until the onions are caramelized. This will take approximately 20 minutes.

3.) Remove from the heat and set aside. While the onions are cooking, prepare the Gorgonzola butter and grill the steaks. To make the butter, combine 1 stick of softened butter with the Gorgonzola. Refrigerate in a covered dish until ready to use.

Express Tips

Caramelized onions can be prepared in large batches and frozen in 1 cup servings for dressing up a variety of dishes. For the steaks, brush the grill grate with oil to keep the steaks from sticking. With the grill lid open, sear the steaks for 5 minutes on one side. Flip the steaks and sear for 5 minutes on the other side. Reduce the grill to medium heat, or move directly off the flame (indirect heat). Close the grill lead and cook steaks for an additional 5 to 8 minutes. Remove from grill to platter, tent with foil, and let rest for 5 to 10 minutes. Assemble the dish by plating the steak, adding a dab of Gorgonzola butter, and dressing with caramelized onion on top.
