Guest Post from Jo, my Farmer Girl sister: I would have taken a picture of this dish, but it was devoured by my little ones before I got the chance. In the never ending dance of professional working diva by day and devoted mother at night, I prepped and started this dish in the morning before work. My husband’s job was to get it on the kitchen table for that evening’s dinner.
By the time I walked through the door that night, my youngster were plowing through it. Success and triumph! Really, there is not much more that needs to be written…this recipe is officially kid approved. Thanks sixsistersstuff.com! Adapted from Slow Cooker Pineapple BBQ Beef at sixsistersstuff.com.
Slow Cooker Pineapple BBQ Beef
Prep Time: 10 minutes
Cook Time: 5 to 10 hours
Serving Size: 8 servings
- 1 Farmer Girl Chuck Roast
- 1 (20 ounce) can pineapple chunks, juice reserved
- 1 onion, diced
- 1/2 cup apple cider vinegar
- 1/3 cup brown sugar
- 1/2 cup ketchup
- 1 tablespoon mustard
- 2 Tablespoons Worcestershire sauce
- King’s Hawaiin buns
1.) Spray crock pot with non-stick cooking spray. Place Farmer Girl Roast inside.
2.) In a separate bowl, mix together juice from pineapples, onion, vinegar, brown sugar, ketchup, mustard, and Worcestershire sauce. Pour over roast.
3.) Add pineapple chunks to roast and cook on low for 10 hours or high for 5-6 hours (I cooked mine on low all day).
4.) When finished, shred meat using two forks (it should just fall apart by this time). Serve meat on toasted buns, topped with your favorite sandwich fixings, like onions, tomato, spinach, lettuce, and sliced cheese.
A simple, standout dish that’s totally share-worthy, I hope you enjoy this Slow Cooker Pineapple BBQ Beef Recipe!
