Pork Chops with Strawberry Balsamic Sauce

I just love it when a recipe is fast, delicious, and uses seasonal ingredients to boot. Isn’t that the best? As we head into strawberry-picking season, I was hunting around on that-there Internet for a recipe with a strawberry twist for this month’s Farmer Girl pork chops, and happened upon this strawberry balsamic sauce at The Hungry Housewife.
It’s adapted below for Farmer Girl pork boneless pork chops. Enjoy!

Pork Chops with Strawberry Balsamic Sauce

Cooking: Easy
Prep Time: 10 Minutes 
Serving Size: 4 servings
Cook Time: 40 minutes

 

Ingredients

  • 4 Farmer Girl Pork Chops, boneless
  • 1 teaspoon coarse Kosher Salt
  • ½ teaspoon pepper
  • 2 teaspoons olive oil
  • 1 teaspoon butter
  • 1 cup chopped strawberries
  • 1½ tablespoons brown sugar
  • 2 tablespoons Balsamic Vinegar
  • 2 teaspoons dried rosemary
  • Pinch coarse Kosher salt
  • Pinch Pepper

Directions

1.)Thaw Farmer Girl pork chops in the refrigerator for 24 to 48 hours. Pat dry with a paper towel. Season with salt and pepper. In a skillet over medium heat, add the olive oil and butter. Brown the pork chops for approximately 4 to 6 minutes per side.  Remove the chops to a plate and tent with aluminum foil.  As always, let the meat rest for a good five to ten minutes. If the pork chops are not cooked to your taste, simply throw them back into the skillet and cook for an additional minute or two on each side.

2.) In a saucepan over medium heat, mix together the chopped strawberries, brown sugar, vinegar, rosemary, salt and pepper. Cook for 10 minutes, stirring occasionally.  Reduce heat to low and cook for an additional 5 to 10 minutes, stirring occasionally or until the sauce becomes thick.

3.) Serve sauce over pork chops.
