Grass Fed Beef and Broccoli Stir Fry

We’ve developed a simple way to pair those necessary fibers alongside a beautiful grass fed skirt steak–all swimming in a sweet and spicy stir fry sauce.

This recipe was adapted from the EatingWell recipe Stir-Fried Chile Beef and Broccoli.  Enjoy!

Beef and Broccoli Stir Fry

Serving Size: 4 servings
Cooking: Moderate
Prep Time: 15 to 20 minutes
Cook Time: 15 minutes

 

Ingredients

  • 1 pound Grass Fed Skirt Steak, thawed
  • 12 ounces broccoli florets
  • 1 tablespoon garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 teaspoons soy sauce
  • 2 teaspoons plus 1 tablespoon dry Sherry, divided
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon ground red pepper
  • 2 tablespoons Hoisin sauce*
  • 2 tablespoons plus 1 tablespoon canola oil
  • 1 onion, thinly sliced

*Hoisin sauce can be found in the Asian section of the grocery store. 

Directions

1.) Thaw Farmer Girl skirt steak for 24 to 72 hours in the refrigerator, in its packaging.

2.) Marinade Steak: Combine garlic, ginger, soy sauce, 2 teaspoons dry sherry, cornstarch, salt, ground pepper and red pepper in a large bowl or ziplock bag. Remove Farmer Girl skirt steak from packaging and slice into 1/4 inch thick strips.  Add skirt steak to marinade and let sit. In a small bowl mix Hoisin sauce and the remaining 1 tablespoon dry Sherry.  Set aside.

3.) Prep Veggies: Cut broccoli into florets and slice the onion.  Reserve the onion.  Steam broccoli until bright green, approximately 2 to 3 minutes. Drain broccoli and set aside.

4.) Stir fry: Heat a large skillet over high heat.  Add 2 tablespoon oil. Add one batch of the skirt steak to the skillet in a single layer.  Do NOT overcrowd the skillet – doing so will result in steamed meat.  Stir fry the skirt steak for approximately one to two minutes, moving the meat often so it doesn’t burn.  Transfer to a plate.  The steak will continue to cook while resting.  Stir fry the next batch of skirt steak, adding oil as necessary, and transfer to same plate.  Let rest. Add 1 tablespoon oil into the skillet, add onion and cook until started golden, about 1 minute.

5.) Add the broccoli and stir briefly, just to mix the veggies. Add the beef and any juices to the skillet with the vegetables. Stir in the Hoisin sauce mixture. Stir-fry until the for approximately 1 minute to combine the ingredients. Let rest briefly and serve.
