Coffee and Chocolate Braised Short Ribs Recipe

While simple, these grass fed beef short ribs turn out rich, tender, and sweet as a box of chocolates. We’ve tried to build a recipe that will appease your valentine’s sweet tooth while filling them up with our robust, healthy grass fed beef. Here it is in eight easy steps. 

Coffee and Chocolate Braised Short Ribs

Cook Time: 2 to 2.5 hrs.

 

Ingredients

  • Olive oil
  • 5 lbs. Farmer Girl Meats grass fed beef short ribs
  • Salt and pepper
  • 1 large onion, chopped
  • 1 large red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1 teaspoon cumin
  • 2 cups strong coffee
  • 1.5 cups chopped tomatoes, with juice (or one 28 ounce can)
  • 1 tablespoon tomato paste
  • 1 cup chopped bittersweet or unsweetened chocolate (70% or higher cacao)

 

Directions

1.) Rinse short ribs under cold water and pat dry, then season liberally with salt and pepper.

2.) Heat olive oil in a cast iron pan or Dutch oven over medium-high heat and sear the short ribs so they’re browned on all sides. Be sure not to crowd the pan. Set the short ribs aside once browned.

3.) Reduce the heat to medium and preheat the oven to 275 degrees F.

4.) In the Dutch oven or cast iron pan (whichever you used) add onions and peppers. Cook until the onions are translucent, approximately 5-10 minutes.

5.) Mix in the garlic and cook for another minute. Then stir in the brown sugar and spices and cook for 5 more minutes.

6.) Add the coffee, chopped tomatoes, and tomato paste and bring the whole mixture to a boil.

7.) Return the short ribs to the pot, cover with lid (or pour into a casserole dish and cover with lid or foil), and braise in the oven for 2 to 2.5 hours.

8.) Remove from the oven and add chocolate until melted. Finally, season with salt and pepper.
