My Farmer Girl friend Molly gave us a quick and easy recipe for breakfast burritos that she makes on the weekend and heats up each morning for a yummy, protein-packed breakfast.

Molly’s Sausage Breakfast Burritos
Serving Size: About 10 servings

Cook Time: 10 min.
Ingredients
- One pound Pasture Raised Breakfast Sausage
- One dozen cage-free eggs
- 2 cup chopped spinach
- 1/2-1 cup grated aged cheddar cheese
- 10 medium whole wheat tortillas
Directions
1.) Brown breakfast sausage in a large skillet. In another skillet, scramble one dozen eggs.
2.) Add spinach and grate cheese into eggs during scramble. Combine both skillets into large bowl.
3.) Rip 10 squares of foil. Place tortilla on foil, add desired amount of mixture, and roll into burrito. Wrap in foil square and add to larger freezer bag. Repeat until tortillas and/or mixture is gone.
4.) Place of wraps into freezer. When ready to eat, remove wrap from freezer and remove foil. Microwave for approximately two minutes (depending on your microwave and desired heat level). Enjoy!
Molly’s tip: Substitute or add your favorite cheese or vegetables to the mixture or try bacon in place of the sausage.
